Cocktail-Tomaten waschen, halbieren und Stielans\u00e4tze entfernen. Schalotte sch\u00e4len und in d\u00fcnne Ringe schneiden. Knoblauchzehe sch\u00e4len. Salbeibl\u00e4tter waschen und trockentupfen.<\/p>\n<p>\u00d6l in einer Pfanne erhitzen. Schalotte leicht braun braten, Zucchini dazugeben, Knoblauch dar\u00fcber pressen. Alles knapp gar d\u00fcnsten lassen. Danach die mit Salz und Pfeffer verquirlten Eier untermischen. Eier stocken lassen. Die Tomatenh\u00e4lften und Salbeibl\u00e4tter in den letzten Minuten auf die Oberfl\u00e4che der Frittata setzen und warm werden lassen.
